Pumpkin Spice Granola

As you walk through the grocery store, farmers market or really any retail establishment during this time of year, you are met with quite literally pumpkin flavored everything. It's all very exciting and as consumers, it is easy to get swept up in it and go holiday item purchase crazy.

An easy way to save some buckaroos and make your home smell like an enchanted autumn forest of pumpkin spice gumdrops is to make your own delicious fall creations...like say Pumpkin Spice Granola! For most pumpkin flavored treats, all one really needs to invest in is pumpkin spice seasoning and pumpkin puree.

For this particular treat, most all ingredients should be kitchen staples, minus the special seasonal spice blend. This granola is absolutely the perfect topper for smoothie bowls, yogurt (non-dairy, of course!), fruit, oatmeal, or even on it's own with plant-based milk.

This super simple recipe will likely save you from spending $10 on granola that can easily be made at home for maybe $2 max? Let the pumpkinizing begin!

Pumpkin Spice Granola

Time: 20 min (5 min prep, 10 min cook, 5 min cool)

Servings: ~8-10 (depends on how you're eating it)

Ingredients:

  • 1.5 cups rolled oats

  • 2 T maple syrup

  • 2 T almond butter (or nut butter of choice)

  • 1 T ground flax

  • 1 T pumpkin seeds

  • 1 T crushed walnuts

  • 1 t pumpkin spice seasoning - or more to taste (I use Trader Joe's kind)

*You can honestly add in whatever other toppings you feel! There is a lot of room for creativity here.

Directions:

  1. Pre-heat oven for 400 degrees.

  2. Mix all ingredients together in mixing bowl so everything is mixed evenly.

  3. Pour and spread mixture on flat baking sheet evenly.

  4. Bake for 10 minutes.

  5. Allow to cool, and then enjoy!
